Freshness in a Cup


Happy Monday my little sunshines!

Why am I in such a good mood? Well it is finally starting to look like spring outside. The air is warm enough that I have been able to break out my favorite Patagonia shorts and Raybands just to walk to class. Oh, what are those beautiful pink tuffs floating around? They are the petals of the Cherry blossoms that line the road. Ah, spring.

The gorgeous weather and outside world has given me such a positive attitude. So in honor of how wonderful nature is I am posting about a drink as green as the leaves on the trees. It is pretty much a light smoothie of freshness in a cup.


When we started the Paleo lifestyle, one of the first things that we got to help was a Nutribullet. I began to use it so much that when it was time to move back into my dorm room after the summer at home, I took it with me. Now it holds a special place on my counter, ready for its almost daily use. There are so many combinations that you can put together, but today I am going to focus on one of my favorites.

This drink is perfect for after a workout because it is not only packed with nutrition, it is also very light and fresh. All you need is three ingredients!

1. Fresh spinach
2. A lemon
3. Half of a cucumber
Done!


I usually fill my Nutirbullet cup about halfway full with baby spinach. I am a big fan of these green leaves, so I use more then some people might.

Then take the half cucumber and cut it into slices. It doesn't matter how thick the slices are because they are going to get pulverized in the Nutribullet anyways. Add your slices into the cup. Note that I did not peel the cucumber, this is my personal preference. After your blend it, most of the skin will be turned into liquid form, but there might be a few little pieces left over. To prevent this peel the cucumber before cutting it into slices.

Next take the lemon, cut it into four quarters. Then, after removing the seeds, take the entire inside of the lemon (pulp and all, not just the juice) out. Sometimes you can just bend it and the inside will peel right out, or you could use a knife as not to be covered in lemon juice. Add the entire inside to your spinach and cucumbers.

Last, add water to your cup (add more if you want it to be more or a liquid and not a smoothie consistency) and screw on your lid. Blend using the Nutribullet for about 20 seconds or until you don't see any big pieces of green.

AND BAM! You have a vitamin packed, refreshing super drink! It is perfect for after a long run or ride, but also just to put on a mason jar and drink while soaking up some rays. I swear you just feel healthy after drinking it.
